I stumbled upon Comida del Pueblo while at one of the TUM (Toronto Underground Market) events in the fall. The three chefs behind Comida del Pueblo – Guillermo Escalante, Josh Standing and Manuel Romero – had one of the most popular stations at the event. When I reached the front of the line it was easy to see why. It was their cornbread grilled cheese sandwiches that were drawing the crowd. The sandwich was warm with gooey melted cheddar spilling from the sides of the crumbly cornbread that was topped with cool, flavorful guacamole and sour cream. It was definitely way more imaginative and hearty than any other grilled cheese I’ve ever had!
